Wire up @stellar/stellar-sdk in NFT claim backend

The NFT claim provider in backend/src/nft-claim/providers/stellar-handler.service.ts contains a TODO placeholder for wiring up @stellar/stellar-sdk. Implement the SDK integration, remove the sketch comment, and ensure Stellar transaction handling works for NFT claims.
