Update to support Pydantic 2

Expected Behavior

I can't update my application code to use Pydantic 2 because DBX is using Pydantic 1. AFAIK Pydantic 2 is backwards compatible if you're willing to update package import names.

Current Behavior

DBX failures happen when I update to Pydantic 2

Steps to Reproduce (for bugs)

Install DBX and Pydantic 2. Try to use DBX.

Context

I want to use Pydantic 2.1

• dbx version used: 0.8.18 or earlier
• Databricks Runtime version: irrelevant

We ultimately moved off of dbx. For some of our use cases, we just used the Databricks SDK directly and for others, we moved to Databricks asset bundles.

It seems like a very easy change since Pydantic v2 ships with v1. See #888.
