Hopefully people won't disregard the information as outdated if we mention QGIS 3.16/3.18. But I'm unsure how to phrase it to reference current LTR and possibly previous.

The mention of "recent release of QGIS 3.16" in docs about Projections rephrased.
Note that the Projections page needs bigger update, see #757.
