Updated various NuGet package dependencies to latest patch/minor versions across all projects. Changed EventStore Docker image to kurrentplatform/kurrentdb:26.1 and refactored Docker client instantiation to use Docker.DotNet.DockerClientBuilder. No functional code changes.
