Rename Analytics module to OperationalInsights - #71

Renames the Analytics namespace, project, package, and test suites to OperationalInsights across src, tests, fit, docs, and CI workflows (Couchbase.Analytics -> Couchbase.OperationalInsights, Couchbase.AnalyticsClient NuGet id -> Couchbase.OperationalInsightsClient, etc). The FIT performer's synced gRPC .proto contents are left untouched since they come from an external repo; only the containing project/directory was renamed.
