Actually, let's try pinning the undici dependency to use the same version bundled with (possibly the latest version of) Node v24. This may need some coordination to ensure that tests run against a pinned version of Node as well as a pinned version of undici. |

#854 seemed to solve failing tests, but now they’re failing again and they don’t appear to when using the latest version of Node.js. 🤷
