Gives Echo a consistent voice across console and GUI, and retints the
stock JavaFX-tutorial CSS palette to match.

Echo's messages previously used generic SE-EDU boilerplate ("Got
it.", "Nice!", "OK,") and the GUI still carried a leftover Duke
asset name, neither of which gave the chatbot any character of its
own.

Rework every user-facing string in Ui, Echo's unknown-command
error, and the GUI's greeting bubble to use one consistent "echo"
voice (sound bouncing back), and retint main.css/dialog-box.css
from the unedited JavaFX-tutorial palette to a cool blue/teal theme
that matches it. Rename DaDuke.png to EchoAvatar.png as the last
literal Duke reference in the project.
