Update the README quickstart, the "Docker images" section, and the clickhouse-ddl README to use the public.ecr.aws/rotel-dev images that release.yml publishes. The rotel-python-processors references stay on Dockerhub since processor-release.yml has no ECR push job.
Update the Python Processor image section and its docker run example to public.ecr.aws/rotel-dev/python-processors, matching the naming used for the rotel and clickhouse-ddl images.
