docs: add payment route explorer

Summary

• add a filterable catalog of 506 live fiat, cross-chain, and exchange routes into and out of Tempo
• include source and destination rails, currencies, provider links, route type, region, minimums, limits, settlement estimates, and eligibility caveats
• add the page to Ecosystem navigation and provide a plain-Markdown fallback for agents

Validation

• pnpm check:types
• targeted Vitest suite: 25 tests passed
• pnpm check:markdown
• pnpm check:anchors
• production build completed against a local OpenAPI fixture because the production spec was unreachable from the sandbox; dead-link checking remained enabled in the committed config
• rendered page verified in Chromium; route filters and pagination work
