fix(eve): preserve legacy message provenance

Summary

Legacy history repaired by #3303 can contain legacy.unknown entries whose content matches a known human request, and the compatibility repair currently scans every durable read. This centralizes known-human classification on kind: "user" and adds modelMessageFormatVersion to the durable snapshot contract: unmarked histories repair and validate in one pass, current snapshots return without reading history, and malformed or future versions fail explicitly. Related to #3300.

This leads with internal classification terms such as “model-history” and “unknown provenance,” and it can imply the legacy entry is removed even though the test shows it remains while the human request is replayed.
